This week was the week of cookies. 36 of them, to be precise, of two different flavours because I am monumentally indecisive – and asking on twitter provided an even split between the two. Red Berry/ White Chocolate and Pear/White Chocolate.
The recipe is one I found and wrote down two years ago, so I can’t link back to the original source, but I can tell you that it’s incredibly simple and makes millie’s style, soft-in-the-centre-crunchy-round-the-edges type cookies.
Every batch.
(As long as you don’t burn them…)
Ingredients:
Red Berry version: Pear version:
125g butter 125g butter
100g soft, light brown sugar 100g soft, light brown sugar
125g caster sugar 125g caster sugar
1 egg 1 egg
225g self raising flour 225g self raising flour
frozen red berries/summer fruits 5 or 6 pear halves (adjust to taste, really)
100g white chocolate 100g white chocolate
Method:
(both versions)
– preheat oven to 180C/Gas Mark 4
– cream butter & sugars until fluffy
– combine egg
– sift in flour
– add flavouring
– make dough balls and place them on some parchment paper on a baking tray – your cookies WILL spread out, so leave space between each cookie 🙂
– bake for about 7 minutes, or until golden
– take out and leave to cool/set/firm
This is such a simple recipe and you can have a ridiculous, almost infinite, number of variations. I usually get about 18 mid-large sized cookies out of the batter, which is great when I have more people to share them with. If you’re worried that the batter is too dry, add a splash of milk to wet it a little – and a super handy tip I picked up was to use two dessert sized spoons to fashion your cookie dough balls into almond shapes
Considering we’re also on the run up to Mother’s Day, this would be such a sweet gift idea if you’re strapped for cash, but still want to do something special! Make her favourite flavour combination,. perhaps use a cutter to make cute shapes, and wrap them up and put them in a gift box. Perfect or what?

Learning how to make them so they emulated Millie's/Ben's cookies was the turning point in my baking life. Now any other sort of cookie (unless it's pain ol' choc-chip) is just a disappointment!xo
